Gilly Bent runs the Cornish Fruitcake Company, and could see an opportunity in the market to provide sumptuous farmhouse cakes in a variety of different sizes. Gilly has a long career in the catering industry and has a passion for home baking. She and her family re-located from the Midlands to their home in Cornwall in 2004. Since then, Gilly has been home baking in between training food hygiene courses to many businesses throughout Cornwall. Her expertise in the field and her love of baking inspired the creation of the Cornish Fruitcake Company. I have always had a passion for high quality fruitcakes; learning, taking advice and inspiration from my Mum, who herself makes fabulous fruitcakes. |
In 2007, after many successful tasting sessions with family and friends, I decided to
fulfil a long standing ambition to start baking my cakes commercially. The success of the
Cornish Fruitcake Company to date has been phenomenal,
and my customer list is growing!
All cakes are baked on a small scale to retain that special farmhouse character. After
baking each cake is carefully and regularly ‘fed’ with their appropriate spirit and given
time to mature. Cakes are usually sold undecorated, however they can be decorated
with wonderful glacé fruits and nuts to create a luxury eating experience.
At seasonal times, such as Christmas and Easter, the fruit and nut toppings are more
lavish and include glacé fruits such as pears, figs and apricots. New recipes are under
creation as you read this, however if you have a particular flavour or ingredient that you
would like us to consider, please let us know.
